Summer fruit is sweeter than ever our family can’t get enough! SO I’m leaning into that this week for my family’s meal plan and making lots of delicious summer fruit recipes.
Smoothies this week for breakfast and also Acai Bowls with tons of toppings! We’re making Pure Gold smoothies (page 54 in the Smoothie Project Cookbook), Chai Beauty Greens Smoothie and Chocolate Berry “Nice Cream” (page 149).
These Whole Grain Fruit Filled Bars keep us full for hours when we’re searching for a snack.We’re also making Watermelon Pizza (such a fun kid-friendly activity!), Coconut Fruit Popsicles and another kid fave — Banana Sushi.

Sunday: We have tons of fresh summer fruit from the farmers market and a huge piece of salmon, so naturally we’re making this Broiled Salmon with Summer Fruit Salad paired with Rice Cooker Mac and Cheese and steamed corn.
Wednesday: Chicken Paillard with Summer Salad is one of our family’s favorites! Then we’re adding some air fried patty pan squash that are so beyond good.
Thursday: Crispy Chicken Nuggets with Sweet Potato Fries and Roast Broccoli from One Potato. These chicken nuggets are baked instead of fried but still super crispy. You’ll never make frozen ones again after these!
Saturday: Support a local restaurant.
